Create multiple pages in illustrator

1. Open Adobe Illustrator cs5.
2. Click 'File'.
3. Click 'New...'.
4. Enter the number of pages you want in the 'Number of Artboards:' field.
5. Click the 'Ok' button.

That's all there is to it! Now you have a multi page document. Go to town and save your document as a PDF if you like.

Editing a multi page PDF using Adobe Illustrator cs5

• Open Adobe Illustrator cs5.
• Click 'File'.
• Click 'Open...'.
• Navigate to the directory on your computer where the PDF is stored and select it.
• Click 'Open'. You can open any multipage pdf in illustrator cs3 cs4 or cs5.
• If the PDF file you are opening was saved with the 'Create PDF Compatible File' option select, the file will open with all the art boards like normal.
• If the PDF you are opening was saved without the 'Create PDF Compatible File' option selected, you will be prompted to 'Select a page from the PDF to open.'. Open the selected page, make your changes and save the document. When you save the document using 'Save' or 'C+S' command, Illustrator will automatically save that particular page back into the original multi page document. If you use the 'Save As...' command, Illustrator will save the page as a new document.

Creating a multi page PDF using programs besides AI(Illustrator)

Keep in mind that most publishing software these days allows you to save or export your finished multi page document as a PDF. Google Docs are Open Office are great publishing programs, you can create PDFs with them, and they're free. The cool thing about Illustrator is that you can edit PDFs with it. Publishing programs like the ones I mentioned can't edit PDFs, you have to keep a separate source file in order to make changes.
